Po <a rel=\"nofollow noopener\" target=\"_blank\" href=\"http:\/\/freeradio.com.ua\/peremishchenyi-biznes-iak-pratsiuiut-kompanii-z-donechchyny-v-umovakh-vidkrytoi-viiny-reportazh-zi-skhid-ekspo-2023\/\">Re\u0438i<\/a> Prema re\u010dima \u0161efa regiona Pavla Kirjenka, 905 preduze\u0107a preme\u0161teno je iz oblasti Donetsk, \u0161to je 70 odsto svih preduze\u0107a koja su poslovala pre po\u010detka potpune invazije. Ipak, uprkos opasnosti i nedostatku programa podr\u0161ke, neki preduzetnici ostaju zaposleni i \u010dak se vra\u0107aju po odlasku.<\/p>\n<p>Lidija Ov\u010darenko iz Slovianska ve\u0107 \u0161est godina proizvodi zanatske sireve. Kada je po\u010dela potpuna invazija, \u017eena je odlu\u010dila da ode u inostranstvo, ali se vi\u0161e od godinu dana kasnije vratila ku\u0107i i, na brojne zahteve mu\u0161terija, nastavila sa pravljenjem sira. Lidija ne pravi dugoro\u010dne planove \u2013 sve zavisi od situacije na frontu. Me\u0111utim, dok njegova omiljena stvar odvra\u0107a pa\u017enju od anksioznih misli, on u potpunosti posve\u0107uje svoje vreme tome. Razgovarali smo sa preduzetnikom o savremenim izazovima.<\/p>\n<p style=\"text-align: center;\"><span style=\"font-size:18\"><strong>Od berbernice do zanatskih sireva<\/strong><\/span><\/p>\n<p>Sloviansk se nalazi u regionu Donetsk, a iz ovog grada je do\u0161lo do zaplene ukrajinske teritorije od strane Rusa i dugoro\u010dnog rata koji je po\u010deo 2014. godine. Tri meseca kasnije, Oru\u017eane snage Ukrajine ponovo su uhvatile grad, ali je od tada to opasna zona na prvoj liniji fronta.<\/p>\n<p>Od devedesetih lidija Ov\u010darenko se bavi raznim poslovima u Sloviansk \u2013 trgovini, imala je kafi\u0107, frizerku. Godine 2014. za vreme okupacije grada razneti su prozori preduzetni\u010dkog kafi\u0107a, a nakon toga vi\u0161e nije \u017eelela da ula\u017ee u njegovu restauraciju. Zato sam odlu\u010dila da probam da pravim sireve \u2013 prvo za sebe i svoje prijatelje.<\/p>\n<p>&#8222;A onda dolazi do uzbu\u0111enja, radoznalosti, interesovanja, \u010ditate o njima, u\u010dite, probate ovo i ono. Poznanici su me hvalili. \u0160tavi\u0161e, imam potpuno prirodan proizvod: samo mleko, kiselo testo, enzim \u2013 i to je to. Nema aditiva, nema antibiotika, nema hemikalija. Sve se radi ru\u010dno, to je te\u017eak posao. Zbog toga sam vremenom odlu\u010dio da uklonim preteranu skromnost i po\u010dnem da zara\u0111ujem na njemu. Ona ka\u017ee da ve\u0107 du\u017ee vreme bira pouzdanog dobavlja\u010da tako da je proizvod visokog kvaliteta. Pre rata, \u017eena je obra\u0111ila 200 litara mleka nedeljno i kuvala vi\u0161e od 20 vrsta sira: mekan, tvrd, bu\u0111av.<\/p>\n<p style=\"text-align: center;\"><span style=\"font-size:18\"><strong>20 zanatskih vrsta sireva<\/strong><\/span><\/p>\n<p>Svaka vrsta sira ima druga\u010diju pripremu. Prvo, mora da postoji obavezna pasterizacija mleka, enzima i starter kultura, koje se natalo\u017ee na odre\u0111enoj temperaturi, kuvane, dr\u017eane pod pritiskom, uronjene u sos rastvor. Svaka vrsta sira ima svoju tehnologiju i recept.<\/p>\n<p>Lidija ka\u017ee da pravi opis fotografije svakog sira: istorije porekla, njegovog sadr\u017eaja masti, gustine, ukusa, kako bi ljudi razumeli kako izgleda.<\/p>\n<p>&#8222;Niko nije probao norve\u0161ki sme\u0111i sir Gudbrandsdalen i ne zna o \u010demu se radi. Neki ga porede sa \u0161erbetom, neki sa posoljenom karamelom, a neki sa hematogenom. Zapravo, sir ima sme\u0111u boju i sladak ukus zbog dugog vremena kuvanja dok se laktoza u njemu ne karamelizuje&#8220;, obja\u0161njava proizvo\u0111a\u010d sira.<\/p>\n<p>Nakon su\u0161enja, sirevi su prekriveni prirodnom korom, tip montazio se trlja medom i himalajskom solju, a havarti se trljaju maslinovim uljem sa biljem. A onda \u2013 3-6 meseci u fri\u017eideru za sazrevanje, sa fiksnom vla\u017eno\u0161\u0107u vazduha i temperaturom. Svakog dana ih je potrebno predati, o\u010distiti, oprati i proces nadgledati. Iako Lidijina proizvodnja nije velikih razmera, to zavisi od snabdevanja elektri\u010dnom energijom i gasom.<\/p>\n<p style=\"text-align: center;\"><span style=\"font-size:18\"><strong>&#8222;Granata je sletela \u2013 morao sam da se vratim&#8220;<\/strong><\/span><\/p>\n<p>Porodica Ov\u010darenko odlu\u010dila je da napusti grad u aprilu 2022. U to vreme, Lajman je ve\u0107 bio uhva\u0107en, linija fronta je bila 15 kilometara od Slovianska.<\/p>\n<p>&#8222;Nismo imali ni struju ni gas, pa smo odlu\u010dili da odemo. Po\u010deo sam da pravim neke sireve pre rata, kuvao sam ih, a njihovo sazrevanje je dugotrajno \u2013 i \u0161est meseci i godinu dana. Skuvala sam \u010dedar, parmezan i nisam ga ni sama probala. Preostale 43 glavice sira te\u0161ke do po 2 kg poslate su Dniprou, u Kijevu, podeljene ljudima&#8220;, ka\u017ee proizvo\u0111a\u010d sira.<\/p>\n<p>Lidija je ostala u inostranstvu vi\u0161e od godinu dana, ali tamo nije kuvala sir \u2013 nije prona\u0161la prave sirovine. U junu 2023. vratila se ku\u0107i.<\/p>\n<p>&#8222;Kasetna \u0161koljka je sletela na cvetni krevet, bilo je neophodno obnoviti ogradu i prozor u spava\u0107oj sobi. Grejanje ku\u0107e je odmrznuto. Zato sam morao da se vratim. Tako\u0111e, redovne mu\u0161terije su proganjane, pitali su kada \u0107e biti sve\u017eih sireva. A seljak, koji je stalno snabdevao mlekom, ohrabrivao je da nastavi posao, jer krave leti slobodno pasu, jedu sve\u017eu travu \u2013 mleko se dobro daje. Zbog toga se Lidija ponovo latila pravljenja sira.<\/p>\n<p>Lidijina produkcija nije velikih razmera, ali nudi \u0161irok spektar. Sada \u017eena kuva 15 vrsta sira. Za kupce koji su oti\u0161li, porud\u017ebinu sada \u0161alje Nova Poshta u sve regione Ukrajine.<\/p>\n<p>&#8222;Sve glave pravim malim tako da ne moram da koristim nikakve hemijske aditive. Manja glava br\u017ee sazreva. Zato radim veoma male da ubrzam ovaj proces. Pristupam ovome na takav na\u010din da \u010dak i ako asortiman nije tako pogodan kao \u0161to mi odgovara, ali ovako se ne\u0107u pla\u0161iti nestanka struje. On sam razvija posao, planira da razvije brend i logo za\u0161titnog znaka za svoje sireve.<\/p>\n<p>&#8222;Nekako nikada nisam razmi\u0161ljao o pote\u0161ko\u0107ama.
